FH Salzburg visited Resch&Frisch Production Facilities to kick off New Cooperation

Dec 20, 2024

We are excited to announce that a team from FH Salzburg recently visited the production facilities of our pilot partner, the bakery Resch&Frisch. This visit marks the beginning of a promising collaboration aimed at addressing food surplus and substandard product challenges.

The Austrian bakery Resch&Frisch operates a total of 22 bakery shops in Upper Austria and Salzburg and produces deep-frozen products for home-delivery and the out-of-home market in Austria and Germany. Around 15,000 tonnes of baked goods are produced (at the main production site in Gunskirchen) every year, the reject-rate amounts about 5 %. Whilst in other parts of Austria the transfer of surplus goods has already been organised (e.g. transfer to charitable organisations), this has not been realised for the shops in the Salzburg area

Resch&Frisch, a renowned Austrian bakery, operates 22 bakery shops and cafés in Upper Austria and Salzburg, producing around 15,000 tonnes of baked goods annually at their main site in Gunskirchen. Despite their success, approximately 5% of their products are rejected due to production errors or remain unsold.

Our joint project focuses on finding sustainable solutions for these surplus and substandard products, prioritizing their reuse for human consumption. We aim to establish new partnerships to facilitate the transfer of these goods, particularly in the Salzburg area where such initiatives have yet to be implemented.

Stay tuned for more updates on our progress!
